Hot dog spaghetti

Ingredients 
Serves: 4 

  • 225g dried spaghetti
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1 courgette, diced
  • 1 garlic clove, crushed
  • 400g tin chopped tomatoes
  • 1 tablespoon tomato purée
  • 1 pinch caster sugar
  • 1 splash red wine vinegar
  • 1 teaspoon dried oregano
  • 1 tin hotdogs - drained and sliced
  • 85g mature Cheddar cheese, grated

Method

  1. Bring a large pan of water to the boil, then add the spaghetti and cook for 12 minutes. Drain.
  2. Meanwhile, heat the oil in a large saucepan over a medium heat. Add the onion, carrot, courgette and garlic and cook for 5 minutes or until soft.
  3. Stir in the tomatoes, tomato purée, sugar, vinegar and oregano. Simmer for 5 minutes.
  4. Add the hot dogs, reduce the heat to low and simmer for 10 minutes.
  5. Spoon the hot dog mixture on to the cooked spaghetti and sprinkle with cheese before serving.
